Chef Director

Hywel Griffith

Hywel Griffith is now expanding his role at our sister restaurant Beach House, Oxwich, to take on the leadership role of Lan Y Môr.

Hywel, who hails from Bethesda, in North Wales, opened Beach House in June 2016 and through his leadership has taken the restaurant from strength to strength, building a reputation for modern classic cooking that’s skilful, sophisticated and full of flavour.

Beach House has won many awards for the quality of the food, but it’s the coveted Michelin star, won in 2020, that’s most notably recognised Hywel’s natural ability as a chef.

Hywel has made many TV and radio appearances and regularly showcases his cooking at live events, including the nationwide Foodies Festival. He has twice won the Welsh regional heats in BBC1s Great British Menu, in 2020 and 2021.

While Hywel continues to be behind the pass every day at Beach House, he’ll be providing support to Gerwyn and Nikos for the new direction at Lan y Môr.

 

Head Chef

Gerwyn Jones

Gerwyn Jones, fondly known as ‘Gez,’ joins the Lan Y Môr team from another sister business, Grove of Narberth hotel, here in Pembrokeshire.

Gerwyn joined Grove Executive Chef Douglas Balish in the kitchen in 2018 as Sous Chef, and was promoted to Head Chef in 2021. Alongside Douglas, Gerwyn oversaw all of the food offerings at Grove’s two restaurants, including the award-winning 4 AA Rosette restaurant Fernery.

Prior to this, Gerwyn worked in many first-class establishments across the land and gained a wealth of experience in senior positions for some of the most exciting chefs in the industry, most notably with the extraordinary Gareth Ward at Michelin starred Ynyshir, near Machynlleth.

Gerwyn’s passion for the provenance of food and local ingredients is the perfect match for Hywel, bringing the natural, thriving, warm ethos of Lan Y Môr to life.

When he’s not in the kitchen, Gerwyn will be out in his kayak, exploring the fabulous Welsh coastline around Pembrokeshire and the Gower Peninsular.

Restaurant Manager

Nikos Chatzitheodorakis

Nikos hails from Greece and joins us at an exciting time as we launch Lan y Môr. He has an outstanding pedigree and was most recently Restaurant Director at the Woodspeen in Berkshire. Prior to this, he was at the Vineyard hotel in Stockcros, a beautiful hotel famous for its food and impressive wine list of 5000 different wines.

Nikos’s has a deep and genuine love of hosting, which stems from his childhood where he helped his family hold weekly neighbourhood feasts. His passion and excitement shine through everything he does and he’s certain to bring a sense of fun to Lan y Môr.

When he’s not in the restaurant, Nikos will be out exploring his new countryside surroundings here in Pembrokeshire, or busy baking at home.
